Description

From "The Bread Machine Cookbook" (1991) by Donna Rathmell German. This is a classic cookbook (see below for the updated version link). I've made at least a dozen recipes from this cookbook for bread machines. Although it doesn't have images, it does have reliable recipes. It's a keeper.


Ingredients

For a Small Loaf of Italian Bread

  • 7/8 Cup Water
  • 1 teaspoon Sugar
  • 1/4 teaspoon Salt
  • 2 Cups Bread Flour (or All-Purpose Flour)
  • 1 1/2 teaspoons Yeast

For a Medium Loaf of Italian Bread

  • 1 1/4 Cups Water
  • 1 1/2 teaspoons Sugar
  • 1/2 teaspoons Salt
  • 3 Cups Bread Flour (or All-Purpose Flour)
  • 2 teaspoons Yeast

For a Large Loaf of Italian Bread

  • 1 1/2 Cups Water
  • 2 teaspooons Sugar
  • 3/4 teaspoons Salt
  • 3 1/2 Cups Bread Flour (or All-Purpose Flour)
  • 2 1/2 teaspoons Yeast

Instructions

  1. Place the ingredients in the bread pan in the order suggested by your bread machine's manufacturer. Most prefer the water goes in first.
